A cup with a saucer that has a raised gallery is called a trembleuse, probably because the gallery prevented the cup from falling when the saucer was held by someone with trembling hands. Trembleuses were used primarily for hot chocolate, which was popular among the affluent Viennese, and were a specialty of Du Paquier.
